Coolant temp issues

I'm having issues with my coolant temp readings in tunerstudio. I run the engine up to operating temperatures and in the computer it starts at 300° (almost every time I turn on the ecu at op temps) and somewhat quickly moves down to about 180° and then (the engine is at 170°-200°) over the course of about 5-10 minutes it slowly keeps moving down to 103° and hovers there.
Its on a Nissan l28 with the gm sensor and calibrated for the gm sensor.
