Is there a way to get RPMdot to display and or log??

Depends on the firmware version and what is in the ini file. It isn't specific to the tuning software.

It is logged in the current MS2/Extra 3.0.3 alpha code, but there isn't a gauge for it. You can add a gauge by editing the ini file. (mainController.ini)
find the gauges and then add this line:

rpmdot = rpmdot, "rpmdot", "rpm/sec", -15000, 15000, 65535, 65535, 65535, 65535, 0, 0

You can also create a gauge for it without going in the ini. If you go into designer mode and and create a new gauge or change an existing gauge.
If in designer mode right click on a gauge, select:
Properties --> OutputChannel
and in the dialog you can select rpmdot if you have a firmware with the OutputChannel.

At one time I wasn't able to enter a negative value for gauge limit; I can't recall how I got around it.
