no sensor cal drop down

The TunerStudio, tool tab is only providing a TPS cal selection....nothing for temp/thermistor, etc. Do you need to be connected to a live MS unit for this to be accessed and loaded.

Almost certainly yes.

Connect your Megasquirt ECU and create a new project.

It sounds like you have an MS1 project open.

If you do indeed had an MS1, there is no option to calibrate your thermoster or AFR tables.
