Looking for a nice MS3 compatible IAT sensor. Most likely some sort of K-type thermocouple? Need it to read reliably above 250* and not melt like the typical GM thermister sensor. This is a non intercooled alcohol fueled engine.
Was thinking a sensor like this. Was hoping I could get away without the module and use a similar sensor read by the MS3?
Claims it reads up to 631*.

You could build something like this circuit in the proto area. Change the +12v feed to 5v, delete 10k and 15k resistors (connect pins 8 & 9 to the top of the 1nF cap), and you get a 5v signal at 500C. The output from the circuit could go to any ADC; if routed to one of the MS3X ADCs, delete the filter circuit.
Edit - And yes, that means if using an MS3X card, all you need between the TC wires and the ADC is the AD595.

Would something like this work then for those of us that are less tech savvy and didnt' want to build the circuit?

Yes, either would work, they are very similar in design. However, I can't tell which AD (Analog Devices) chip the first one uses, and the second one looks like it uses the AD8495. That device is optimized for accuracy in the 0-50C range, I would prefer the AD8497 that is optimized for 0-100C. Either can be used to much higher temperatures, as indicated, but accuracy won't be as good. By the way, I just bought some AD8497 chips for $4.81 + shipping (in small quantities), so the price of either of those boards seems quite reasonable!
