Max Amp Relay for car

I'm attempting to cleanup and reduce the number of used factory circuits on a 1992 Convertible Mustang.

I want to have a reachable switch that will power a relay which is connected to the battery. This would be an emergency/standard shutoff for all electricity in the car. Wiringproducts offers such relays, but the top amperage units are: 60, 70, 80, and then 200.

Given the list of notes below, which should I consider ?

- MS3PRO
- Power windows & door locks
- 2 USB connections for datalogging device(s)
- high torque starter
- Power convertible top
- 200 AMP alternator (from when I had huge stereo)
- standard lighting including high beams (No fog lamps)
- Heating & A/C Removed
- Stereo Removed
- Walbro 225 lph fuel pump

I would say you have to split it into 2 systems. One for starter using a proper remote solenoid capable of carrying the start current and another for everything else which should only need a relay rated for 80A to 100A. If it is for racing be careful of the regs, some classes insist on an inline isolation switch which is externally accessible by marshals etc.

I have an external switch battery at rear bumper area - PUSH to shutoff battery.
