The problem I see is the possibility that any flex in the adhesive - I assume you're talking JB Weld or something, not Elmer's White :D - will absorb or damp some of the knock signal. It may work perfectly, it may work erratically, it may not work at all.

I've attached a ring type knock sensor by simply finding an exposed bolt and getting a longer bolt to go through the sensor.

When you just found an exposed bolt, did you try to find one located centered on the block, or any other particular placement?
Also, did you have to find a particular sensor for a tuned response range, or was it just tuned into range in the software/hardware amplification and filtering side?

I'm sure that someone has asked this before, but I haven't found any good answers from someone who's done it.

This was an untuned (broadband) sensor, and for testing purposes, we made no attempt to find an ideal location. I wanted to see if it would work in a bad one. For someone who was actually trying to save a motor with a knock sensor instead of blow one up looking to see if a badly located sensor will detect knock, I would recommend making the effort.

We used a Bosch 0 261 231 008. I think we got it from RockAuto.

If you have any decent salvage yards in your area just go find any late 80's to mid 2000's VW. They all use that style sensor in a number of different connector configurations.

f it has a metal base take a small angle grinder, remove casting surface from block, and check out a body shop for some 3m 8115 panel bonder. (I think thats the part number) Its used to bond sheet metal to sheet metal. Oddest issue is removal if needed. But I tested panel bonding materials when they came out for metal on metal,,,UNREAL you couldnt break the bond but ripped the metal!
