Most OEM ecu's use a short term and long term fuel trim calculation to allow the ecu to adjust to various conditions, without the need to retune.
Its a very simple feature that basically looks at the amount of ego correction in the short term, and if that condition persisted for an extended time, it will save that value in long term memory and use it as a multiplier for the whole map.
So if you have been driving around all day with an average of +10% correction due to some unforeseen condition, the ecu will remember that value and start with that correction applied the next time you start the car again.
Why can't MS do something like this? I can't always drive with a laptop in the car, and would love to know that my ecu can be as smart about its tune as the factory 1990s oem ecu was.

Because it is simple to explain does not make it simple to implement. There are many constraints that make it far from simple to implement on an MS2 in any practical way and this is not going to happen.
