what problems will I have if I use a much larger throttle body?

Have you looked at -- well -- "Throttle Bodies" under "Injectors and Fuel Supplies" on the Manual page.

I run dual 65mm throttle bodies. With a large throttle body you will have large rpm gains with little throttle movement. I had trouble useing map enrich because of the "air dump" into the engine. My solution was to use alpha-n with a low v/s setting, my lowest is 0.7v/s with a 0.6ms squirt. I then doubled the value for the next bin, then doubled the value again and so on. This gave me a good starting point to tune the accel enrich. remenber v/s is volts per second of how fast you open the throttle. With a large TB you will not have to open very fast at all to make fast rpm gains. My setup is guiet driveable, no stumbles or surging.
