Will a JimStim work with any ECU? Mine is a 2005 Subaru STi.

It should have the correct trigger pattern but may need some conditioning to get the signals through the OE signal conditioning. And it will only simulate a fraction of the I/O on an ECU this new. I've seen it used with other OE ECUs before, though.
